Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Crust Ingredients

    In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand.

    Form the Crust

    Press the crumb mixture into the bottom of a 9-inch springform pan evenly, and slightly up the sides. Use the back of a measuring cup to pack it tightly.

    Bake the Crust

    Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while preparing the filling.

Filling Preparation

    Prepare the Cream Cheese

    In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.

    Add Sugar and Sour Cream

    Gradually add in the granulated sugar and sour cream, mixing until fully incorporated and smooth.

    Incorporate Vanilla and Eggs

    Add the vanilla extract and mix. Then, add the eggs one at a time, mixing on low speed just until blended after each addition. Do not overmix.

    Pour Filling into Crust

    Carefully pour the cream cheese filling into the cooled crust, smoothing the top with a spatula.

    Bake the Cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

    Cool the Cheesecake

    Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour to prevent cracking.

    Chill

    After cooling, cover the cheesecake and refrigerate for at least 4 hours or overnight before serving.
