Preparation of Calamari

    Clean the Calamari

    Rinse the fresh calamari under cold water, then clean and slice it into rings about 1/2-inch thick.

    Season the Calamari

    In a bowl, combine the sliced calamari with salt and black pepper. Toss to ensure the calamari is evenly seasoned.

Batter Preparation

    Mix Dry Ingredients

    In a mixing bowl, combine the all-purpose flour, cornstarch, and baking powder.

    Add Wet Ingredients

    In a separate bowl, whisk together the cold water and the egg. Gradually add this mixture to the dry ingredients, stirring until just combined. The batter should be smooth and slightly thick.

Frying

    Heat the Oil

    In a deep frying pan or a pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature using a thermometer.

    Coat and Fry the Calamari

    Dip each piece of seasoned calamari into the batter, allowing excess batter to drip off. Carefully drop the battered calamari into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy.
