Brownie Layer

    Prepare the Oven

    Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

    Melt the Butter

    In a large mixing bowl, melt 1 cup of unsalted butter in the microwave or on the stove.

    Mix Sugars and Eggs

    Add 1 cup of granulated sugar and 1 cup of brown sugar to the melted butter. Mix until well combined. Then add 4 large eggs and 2 tsp of vanilla extract, mixing well after each addition.

    Combine Dry Ingredients

    In a separate bowl, whisk together 1 cup of all-purpose flour, 1 cup of unsweetened cocoa powder, and 0.5 tsp of salt.

    Combine Wet and Dry Mixtures

    Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in 1 cup of chocolate chips.

    Bake the Brownie Layer

    Pour the brownie batter into the prepared pan and spread evenly. Bake in preheated oven for 25-30 minutes or until a toothpick comes out with a few moist crumbs.

    In a separate bowl, cream together 0.5 cup of unsalted butter, 0.5 cup of granulated sugar, and 0.5 cup of brown sugar until light and fluffy. Add 1 large egg and 1 tsp of vanilla extract, mixing well.

    In another bowl, whisk together 1.5 cups of all-purpose flour, 0.5 tsp of baking soda, and 0.25 tsp of salt.

    Gradually add the dry mixture to the wet mixture until just combined. Fold in 1 cup of chocolate chips.

    Once the brownie layer is done baking, remove it from the oven and let it cool slightly. Spread the cookie dough evenly over the brownie layer.

    Return the pan to the oven and bake for an additional 20-25 minutes or until the cookie layer is golden brown and a toothpick inserted comes out clean.

    Allow the brookies to cool in the pan for at least 30 minutes before slicing into bars and serving.
