Prepare Rice

    Cook the Rice

    Rinse the short grain rice under cold water until the water runs clear. Add the rice and water to a rice cooker or a pot. Cook according to the rice cooker instructions or bring to a boil, then reduce to low heat, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Prepare Tofu

    Press Tofu

    Wrap the firm tofu in a clean kitchen towel or paper towels and place a heavy object on top for about 15 minutes to remove excess moisture.

    Marinate Tofu

    After pressing, cut the tofu into bite-sized cubes. In a bowl, combine the soy sauce and sesame oil. Add the tofu cubes and marinate for at least 15 minutes.

    Coat Tofu

    After marinating, sprinkle cornstarch over the tofu cubes and toss gently to coat evenly.

    Cook Tofu

    Heat a non-stick skillet over medium heat and add a little oil. Add the coated tofu and cook until golden brown on all sides, about 8-10 minutes. Remove from the pan and set aside.

Sauté Vegetables

    Sauté Carrots and Zucchini

    In the same skillet, add a bit more oil if needed. Add the julienned carrots and zucchini. Sauté for about 3-4 minutes until tender. Remove from the skillet and set aside.

    Sauté Spinach and Mushrooms

    Add the spinach and mushrooms to the skillet. Sauté for about 4-5 minutes until the spinach is wilted and mushrooms are tender. Remove from the skillet and set aside.

    Sauté Bean Sprouts

    Finally, add the bean sprouts to the skillet and sauté for about 2-3 minutes until just tender. Remove from the heat.

Prepare Sauce

    Mix Gochujang Sauce

    In a small bowl, combine gochujang, sesame oil, sugar, and water. Stir until smooth and set aside.

Assemble Bibimbap

    Layer the Ingredients

    In a serving bowl, place a scoop of rice at the bottom. Arrange the sautéed vegetables, tofu, and garnish on top of the rice.

    Add Sauce

    Drizzle the gochujang sauce over the top of the assembled bibimbap.

    Serve

    Top with sesame seeds, chopped green onions, and a fried egg if desired. Serve immediately and mix everything together before eating.
