Preparing the Meat
Preheat your oven to 225°F (107°C). Pat the American Wagyu roast beef dry with paper towels. This helps to create a nice crust.

Seasoning the Beef
In a small bowl, mix together salt, black pepper, garlic powder, and onion powder. Rub this seasoning mixture all over the beef, ensuring even coverage.

Slow Roasting the Beef
Place the seasoned Wagyu roast on a rack in a roasting pan. Insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, which should take about 3 to 4 hours.

Resting the Beef
Once cooked, remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for at least 20 minutes, allowing the juices to redistribute.

After the beef has rested, slice it thinly against the grain.

On a serving platter, lay out the sliced roast beef, and top with provolone cheese, lettuce, tomato slices, and onion rings. Spread mayonnaise generously on your choice of bread or rolls, and assemble the sandwich.
