Preparing Sushi Rice

Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed.

In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Assemble Sushi Rolls
Place a bamboo sushi mat on a clean surface. Lay a nori sheet shiny side down on the mat. Wet your hands with water to prevent sticking and take a handful of sushi rice, spreading it evenly over the nori, leaving a 1-inch border at the top.

Layer the sliced salmon, tuna, avocado, and cucumber horizontally across the rice. Using the bamboo mat, tightly roll the sushi away from you, applying gentle pressure. Moisten the top border with water and seal the roll.

Using a sharp knife, slice the sushi roll into bite-sized pieces. Serve with soy sauce, wasabi, and pickled ginger.
