Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse it under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Prepare Nori
Lay out a bamboo sushi mat and place a sheet of nori, shiny side down, on top of the mat.
Assemble Sushi Rolls

Spread the Rice
Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to create a tight roll. Seal the edge with a little water.

Slice the Rolls
Using a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a wet cloth between cuts for clean edges.

Arrange the sushi pieces on a platter and serve with soy sauce, wasabi, and pickled ginger on the side.
