Prepare Sushi Rice

Place the sushi rice in a fine mesh strainer and rinse under cold running water until the water runs clear. This removes excess starch.

In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes.

After 20 minutes, remove the saucepan from heat and let it sit covered for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice with a wooden spatula.

Spread the seasoned rice onto a large wooden or plastic tray to cool to room temperature, covering it with a damp cloth to avoid drying out.
