Method

Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold running water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes.

    Season the Rice

    After 20 minutes, remove the saucepan from heat and let it sit covered for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice with a wooden spatula.

    Cool the Rice

    Spread the seasoned rice onto a large wooden or plastic tray to cool to room temperature, covering it with a damp cloth to avoid drying out.

    Slice the Fish

    Using a sharp knife, slice the fresh tuna and salmon into thin strips for easy rolling.

    Julienne the cucumber and slice the avocado in half. Remove the pit and slice it into thin pieces.

Assemble Sushi Rolls

    Place a sheet of nori onto a bamboo sushi mat, shiny side down.

    Wet your hands to prevent sticking, then grab a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Arrange the sliced tuna, salmon, cucumber, and avocado in a line along the bottom edge of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight. Seal the edge of the nori with a little water.

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean edges.
