Sushi Rolls

    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, usually with a 1:1 ratio of rice to water. Once cooked, let it cool slightly.

    Prepare Fillings

    While the rice is cooling, slice the cucumber and avocado into thin strips. If using crab meat, shred it into smaller pieces.

    Assemble Sushi Rolls

    Lay a nori sheet shiny side down on a bamboo sushi mat. Wet your hands to prevent sticking and take a handful of sushi rice, spreading it evenly over the nori, leaving a small border at the top. Place slices of cucumber, avocado, and crab meat in the center of the rice. Roll the sushi tightly using the mat, sealing the edge with a little water. Slice into bite-sized pieces.

    Serve

    Arrange the sushi rolls on a platter and serve with soy sauce, wasabi, and pickled ginger on the side.

Edamame

    Prepare Edamame

    Bring a pot of salted water to a boil. Add the edamame pods and cook for about 5 minutes or until tender.

    Drain and Serve

    Drain the edamame and sprinkle with additional salt if desired. Serve warm in a bowl.

Tempura

    Prepare Vegetables

    Wash and cut assorted vegetables into thin slices or bite-sized pieces.

    Make Tempura Batter

    In a bowl, mix the tempura batter mix with cold water until just combined. Do not over-mix; a few lumps are fine.

    In a deep pan, heat the oil over medium-high heat until it reaches 180°C (350°F).

    Fry Vegetables

    Dip the prepared vegetables into the tempura batter, allowing excess batter to drip off. Carefully place them in the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
