Method

Preparing the Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse it under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

    Cook the Rice

    In a pot, combine the rinsed rice with 1.25 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes, or until the water is absorbed. Remove from heat and let it sit, covered, for 10 minutes.

    Season the Rice

    In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice has cooled slightly, fold in the vinegar mixture gently with a wooden spatula. Allow the rice to cool to room temperature.

Assembling the Sushi

    Prepare Fillings

    Slice the fresh fish, cucumber, and avocado into long, thin strips, ensuring they are all uniform in size for even distribution.

    Lay Out the Nori

    Place a sheet of nori, shiny side down, on a bamboo sushi mat or a clean, flat surface.

    Spread the Rice

    Wet your hands to prevent sticking and take a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch of nori at the top edge bare.

    Add Fillings

    Arrange the prepared fish, cucumber, and avocado strips horizontally across the center of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, start rolling the sushi away from you, applying gentle pressure to form a tight roll. Continue rolling until you reach the bare edge of nori.

    Seal the Roll

    Dab a bit of water on the bare edge of the nori to help seal the roll. Use the bamboo mat to shape the roll gently.

    Slice the Sushi

    With a sharp knife, slice the roll into 6-8 equal pieces, wetting the knife between cuts to prevent sticking.

Serving the Sushi

    Arrange the sliced sushi on a plate. Serve with soy sauce, a dollop of wasabi, and pickled ginger on the side.
