Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch and helps achieve the desired texture.

Cook the Rice
In a pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until dissolved. Once the rice is done resting, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
Assemble Sushi

Roll the Sushi
Lay a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking and take a handful of sushi rice, spreading it evenly over the nori, leaving about 1 inch at the top edge.

Roll it Up
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

Slice and Serve
With a sharp knife, slice the sushi roll into bite-sized pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
