Preparing Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear, about 2-3 minutes.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let sit, covered, for an additional 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
Assembling the Roll

Prepare the Nori Sheet
Lay one sheet of nori, shiny side down, on a bamboo sushi mat or clean surface.

Spread the Rice
Wet your hands to prevent sticking, then grab a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

Add Fillings
In the center of the rice, layer the diced tuna, sliced avocado, julienned cucumber, and cream cheese.

Roll the Sushi
Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling away from you, pressing gently but firmly to shape the roll. Continue rolling until you reach the border of the nori.

Seal the Roll
Dip your fingers in water and moisten the top edge of the nori to seal the roll. Press gently to secure.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces. Clean the knife with a damp cloth between cuts for neat slices.

Sprinkle toasted sesame seeds over the sliced rolls. Serve with soy sauce, wasabi, and pickled ginger on the side.
