    Prepare the Ingredients

    Chop the bacon, mushrooms, onion, and spinach. Grate the cheese and set aside.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

    Sauté the Vegetables

    In the same skillet, add the chopped onion and mushrooms; sauté until softened. Add spinach and cook until wilted.

    Make the Omelet Base

    In a bowl, whisk together eggs, salt, and pepper. Pour the egg mixture into the skillet over the sautéed veggies.

    Cook the Omelet

    Cook until the edges start to set, then gently lift the edges with a spatula and tilt the skillet to let uncooked egg flow to the edges.

    Add Fillings

    Once the omelet is mostly set, add the cooked bacon and cheese to one half of the omelet. Fold the other half over the fillings.

    Finish Cooking

    Cook for another minute or until the cheese is melted and the omelet is fully cooked. Slide onto a plate.

    Serve with Hollandaise Sauce

    Drizzle or spoon Hollandaise sauce over the omelet before serving.
