Cheesecake Preparation

    Prepare the Crust

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan.

    Bake the Crust

    Preheat the oven to 350°F (175°C). Bake the crust for 8-10 minutes until lightly golden. Remove from oven and let cool.

    Make the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Slowly add the granulated sugar and mix until well incorporated. Add the sour cream, vanilla extract, and mix. Finally, add the eggs one at a time, mixing well after each addition.

    Bake the Cheesecake

    Pour the cream cheese mixture over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

    Chill the Cheesecake

    Refrigerate the cheesecake for at least 4 hours or overnight to set completely.

    Prepare the Berry Sauce

    In a small saucepan, combine mixed berries and powdered sugar over medium heat. Cook until the berries break down and the mixture thickens slightly, about 10 minutes. Remove from heat and let cool.

    Serve

    Remove the cheesecake from the springform pan. Slice and serve with berry sauce drizzled on top.
