Method
Prepare the Trout

Season the Trout
Rinse the Idaho Rainbow Trout under cold water and pat dry with paper towels. Season the inside and outside of the fish with salt and black pepper.

Heat the Olive Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the seasoned trout to the skillet.

Make the Almond Topping

Finish the Topping
Stir in the lemon juice and chopped fresh parsley. Remove from heat and set aside.
Prepare Whipped Potatoes

Whip the Potatoes
Drain the potatoes and return them to the pot. Add 4 tablespoons of butter and 1 cup of heavy cream. Whip with a potato masher or electric mixer until smooth and creamy. Season with salt to taste.
Prepare Seasonal Vegetables

Cook the Vegetables
In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the green beans and carrots, season with salt and black pepper to taste, and sauté for about 5-7 minutes until tender.
Serve the Dish

Plate the Dish
On each plate, place a serving of whipped potatoes, top with the trout, and spoon the almond topping over the fish. Serve alongside the seasonal vegetables.
