Method

Prepare the Trout

    Season the Trout

    Rinse the Idaho Rainbow Trout under cold water and pat dry with paper towels. Season the inside and outside of the fish with salt and black pepper.

    Heat the Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the seasoned trout to the skillet.

    Cook the Trout

    Cook the trout for about 5-7 minutes on each side, or until the flesh flakes easily with a fork. Remove the trout from the skillet and set aside.

Make the Almond Topping

    Toast the Almonds

    In the same skillet, add 4 tablespoons of butter and let it melt. Add the sliced almonds and minced garlic, stirring frequently until the almonds are golden brown, about 3-4 minutes.

    Finish the Topping

    Stir in the lemon juice and chopped fresh parsley. Remove from heat and set aside.

Prepare Whipped Potatoes

    Boil the Potatoes

    Peel and chop the russet potatoes into quarters. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes or until fork-tender.

    Whip the Potatoes

    Drain the potatoes and return them to the pot. Add 4 tablespoons of butter and 1 cup of heavy cream. Whip with a potato masher or electric mixer until smooth and creamy. Season with salt to taste.

Prepare Seasonal Vegetables

    Cook the Vegetables

    In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the green beans and carrots, season with salt and black pepper to taste, and sauté for about 5-7 minutes until tender.

Serve the Dish

    Plate the Dish

    On each plate, place a serving of whipped potatoes, top with the trout, and spoon the almond topping over the fish. Serve alongside the seasonal vegetables.
