Method

Cooking Rice

  1. 1

    Prepare the Rice

Rinse 1 cup of jasmine rice under cold water until the water runs clear. Combine the rinsed rice with 2 cups of water in a pot. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed. Fluff with a fork and set aside.

Preparing Chicken

  1. 2

    Cook the Chicken

Cut 1 lb of chicken breast into bite-sized pieces. Heat a large skillet over medium-high heat with a drizzle of oil. Add the chicken pieces and sauté for about 7-10 minutes, or until golden brown and cooked through. Remove from the skillet and set aside.

Cooking Vegetables

  1. 3

    Sauté the Vegetables

In the same skillet, add 1 cup of broccoli florets, 1 sliced medium carrot, and 1 sliced medium bell pepper. Sauté for 5-7 minutes until vegetables are tender but still crisp.

Making Teriyaki Sauce

  1. 4

    Prepare the Sauce

In a bowl, whisk together 1 cup of soy sauce, 1 tablespoon of brown sugar, 2 tablespoons of rice vinegar, 1 tablespoon of sesame oil, 2 teaspoons of minced garlic, and 1 teaspoon of minced ginger until combined.

  2. 5

    Combine Chicken and Sauce

Pour the teriyaki sauce over the cooked chicken in the skillet, stirring to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Assembling the Bowl

  1. 6

    Serve the Bowl

In a bowl, layer the cooked jasmine rice at the bottom. Top with the sautéed vegetables and teriyaki chicken. Garnish with 1 tablespoon of sesame seeds and 2 tablespoons of chopped green onions before serving.
