For the Asparagus

Method

Preparing the Filet and Lobster Tail

  1. 1

    Cooking the Filet

Season the filet mignon with salt and black pepper on both sides. Preheat a grill or skillet over medium-high heat and cook the filet for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

  2. 2

    Cooking the Lobster Tail

If broiling, split the lobster tail in half lengthwise, brush with olive oil, and season with salt and pepper. Broil for about 8-10 minutes until the meat is opaque. If frying, heat oil in a deep fryer or pan and fry the lobster tail for about 3-4 minutes until golden brown.

Making the Drawn Butter

  1. 3

    Preparing the Drawn Butter

In a small saucepan, melt the unsalted butter over low heat. Add minced garlic and cook for 1-2 minutes until fragrant. Stir in lemon juice, salt, and black pepper. Remove from heat and set aside.

Preparing the Whipped Potatoes

  1. 4

    Cooking the Potatoes

Peel and chop the russet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

  2. 5

    Whipping the Potatoes

Add heavy cream, butter, salt, and black pepper to the drained potatoes. Mash or whip until smooth and fluffy.

Preparing the Asparagus

  1. 6

    Cooking the Asparagus

Trim the ends of the asparagus and toss with olive oil, salt, and black pepper. Roast in the oven at 400°F (200°C) for 10-12 minutes, or until tender.
