Lime Cordial Preparation

Juice the Limes
Cut the fresh limes in half and use a juicer to extract the juice. You should have about 1 cup of lime juice.

Make the Syrup
In a small saucepan, combine the lime juice, granulated sugar, and water. Heat over medium heat, stirring until the sugar has completely dissolved.

Cool the Cordial
Remove the saucepan from heat and let the mixture cool to room temperature. Once cooled, transfer the cordial to a clean bottle and refrigerate until ready to use.
Gimlet Preparation

Mix the Ingredients
In a cocktail shaker, combine 2 oz of Stoli Vodka and 1 oz of the house-made lime cordial.

Shake
Fill the shaker with ice and shake vigorously for about 15 seconds to chill the mixture.

Strain and Serve
Strain the mixture into a chilled cocktail glass. Garnish with a lime wedge on the rim of the glass.
