Bun Preparation

Make the Dough
In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. In a mixing bowl, combine flour and salt. Add the yeast mixture and melted butter, mix until combined. Knead the dough for about 10 minutes until smooth.

Let the Dough Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Shape the Buns
Punch down the dough, divide it into 4 equal pieces, and shape each into a ball. Place on a baking sheet lined with parchment paper, cover, and let rise for another 30 minutes.

Prepare the Potatoes
Wash and peel the Kennebec potatoes. Cut them into thick strips for frying.

Heat the Oil
In a large pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Fry the potato strips in batches for about 4-5 minutes or until golden brown. Remove and drain on paper towels. Sprinkle with salt.

Assemble the Burger
Slice the baked buns in half. Spread mustard and mayonnaise on the bottom half. Add the cooked patty, followed by lettuce, tomato, pickles, and onion. Top with the other half of the bun.
