Steak, Egg & Skillet Potatoes Recipe

    Prepare the Steak

    Take the strip steak out of the refrigerator and let it sit at room temperature for about 15-20 minutes. This will help it cook more evenly.

    Season the Steak

    Rub the steak with olive oil, salt, and black pepper on both sides.

    Cook the Steak

    Heat a skillet over medium-high heat. Place the steak in the skillet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Skillet Potatoes

    Prepare the Potatoes

    While the steak is resting, wash and halve the baby potatoes.

    Cook the Potatoes

    In the same skillet used for the steak, add olive oil and heat over medium heat. Add the halved potatoes cut side down and cook for about 10-12 minutes, or until golden brown and tender.

    Season the Potatoes

    Sprinkle garlic powder, paprika, onion powder, salt, and black pepper over the potatoes. Toss to coat and cook for an additional 2-3 minutes.

    Finish the Potatoes

    Remove from heat and stir in fresh chopped parsley.

    Cook the Egg

    In the same skillet (or a clean one), reduce the heat to low. Crack an egg into the skillet and cook for about 2-3 minutes until the whites are set but the yolk is still runny. Season with a pinch of salt and pepper.
