Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold running water for about 5 minutes, or until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium pot, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes. Remove from heat and let stand covered for 10 minutes.

    Season the Rice

    In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture while fanning the rice to help it cool. Let it cool to room temperature.

Prepare Spicy Tuna Filling

    Chop the Tuna

    Using a sharp knife, finely chop the sushi-grade tuna into small cubes.

    Mix the Ingredients

    In a bowl, combine the chopped tuna, mayonnaise, Sriracha sauce, finely chopped green onion, and sesame oil. Mix well until completely combined.

Assemble the Rolls

    Prepare the Nori

    Lay a sheet of nori on a bamboo sushi mat, shiny side down.

    Add Sushi Rice

    Wet your hands with water to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch of space at the top.

    Add Filling

    Place a line of the spicy tuna filling across the center of the rice. Slice the avocado in half, remove the pit, and cut into thin slices. Lay a few avocado slices over the filling.

    Roll it Up

    Using the bamboo mat, carefully lift the edge closest to you and roll it over the filling, applying gentle pressure. Roll until you reach the exposed edge of the nori, then moisten it with a little water to seal the roll.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces, wiping the knife with a damp cloth between cuts to ensure clean slices.

Serve

    Plate the Rolls

    Arrange the sliced rolls on a serving platter. Serve with soy sauce, pickled ginger, and wasabi on the side.
