    Prepare the Ingredients

    Wash and dice the potatoes into small cubes. Set aside. Cut the applewood bacon into small pieces.

    Cook the Bacon

    In a skillet over medium heat, add the diced bacon. Cook until it becomes crispy, about 5-7 minutes. Once cooked, remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.

    Cook the Potatoes

    In the same skillet, add the diced potatoes to the bacon fat. Season with salt and pepper to taste. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are tender and golden brown.

Cooking the Eggs

    Scramble the Eggs

    Crack the fresh eggs into a bowl and whisk until well combined. Pour the eggs into the skillet over the cooked potatoes.

    Add Bacon and Cheese

    Add the cooked bacon back into the skillet. Sprinkle cheddar cheese over the eggs and gently stir to combine.

    Cook Until Set

    Cook the mixture over medium heat, stirring gently until the eggs are just set, about 3-4 minutes. Remove from heat.
