Preparation Steps

   Prepare the Glass

   Chill a rocks glass by filling it with ice water and setting it aside while you prepare the cocktail.

   Muddle the Sugar

   In a separate mixing glass, place the sugar cube and add the Peychaud's bitters. Muddle them together until the sugar cube is mostly dissolved.

   Add the Rye

   Pour the rye whiskey into the mixing glass with the muddled sugar and bitters. Fill the mixing glass with ice and stir well until chilled.

   Prepare the Glass with Absinthe

   Discard the ice water from the chilled rocks glass and add the absinthe. Swirl the absinthe around the glass to coat the sides, then discard any excess.

   Strain the Cocktail

   Strain the chilled rye mixture into the prepared rocks glass.

   Garnish

   Express the lemon peel over the drink to release its oils, then drop it into the glass as garnish.
