Fish Preparation

    Prepare the Cedar Plank

    Soak the cedar plank in water for at least 1 hour before grilling to prevent it from burning.

    Season the Fish

    Brush the Mahi Mahi filet with olive oil. Season both sides with salt and black pepper.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Cook the Fish

    Place the soaked cedar plank on the grill and close the lid. After 5 minutes, place the seasoned Mahi Mahi on the plank. Grill for about 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.

Citrus Beurre Blanc

    Sauté Shallots

    In a small saucepan, melt 2 tablespoons of butter over medium heat. Add the finely chopped shallots and sauté until translucent, about 2-3 minutes.

    Add Wine and Reduce

    Pour in the white wine and bring to a simmer. Reduce the mixture by half, about 5-7 minutes.

    Incorporate Juices and Butter

    Add the lemon juice and orange juice, then slowly whisk in the remaining butter until the sauce is smooth and emulsified. Season with salt and black pepper to taste.

Whipped Potatoes

    Boil the Potatoes

    In a large pot, bring salted water to a boil. Add the peeled and cubed potatoes. Cook until fork-tender, about 15-20 minutes.

    Drain and Mash

    Drain the potatoes and return them to the pot. Mash the potatoes until smooth.

    Add Butter and Cream

    Mix in the butter and heavy cream until fluffy. Season with salt and black pepper to taste.
