Fried Jumbo Shrimp

    Prepare the Shrimp

    Peel and devein the jumbo shrimp, leaving the tails on.

    Make the Breading

    In a bowl, mix together the all-purpose flour, cornstarch, Cajun seasoning, salt, and black pepper.

    Prepare the Egg Mixture

    In another bowl, whisk together the eggs and buttermilk until well combined.

    Bread the Shrimp

    Dip each shrimp into the egg mixture, then coat with the flour mixture, pressing lightly to adhere.

    Fry the Shrimp

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat. Fry the shrimp in batches until golden and crispy, about 2-3 minutes per side. Drain on paper towels.

Kennebec Fries

    Prepare the Potatoes

    Wash and cut the Kennebec potatoes into thin strips.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Drain and pat dry the potatoes. Heat the vegetable oil in a deep fryer or large pot. Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Drain on paper towels and sprinkle with salt.
