Steak Marinade Preparation

    Marinate the Steak

    In a mixing bowl, combine soy sauce, sesame oil, rice vinegar, honey, minced garlic, grated ginger, and black pepper. Whisk until well mixed.

    Add Steak to Marinade

    Place the skirt steak in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, or overnight for best flavor.

Pickling Vegetables

    Prepare the Pickling Solution

    In a saucepan, combine rice vinegar, sugar, salt, and water. Heat over medium heat until sugar and salt dissolve. Remove from heat and let cool.

    Pickle the Vegetables

    In a jar, layer the sliced cucumber and julienned carrot. Pour the cooled pickling solution over the vegetables, ensuring they are fully submerged. Seal the jar and refrigerate for at least 30 minutes.

Cooking the Steak

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade, allowing excess to drip off. Grill for 3-4 minutes on each side for medium-rare, or longer to desired doneness.

    Rest the Steak

    Remove the steak from the grill and let it rest for 5 minutes before slicing against the grain into thin strips.

Assembling the Wraps

    Prepare the Lettuce Wraps

    On a serving platter, arrange the butter lettuce leaves. Place sliced steak, pickled vegetables, sesame seeds, and chopped scallions on top.

    To eat, take a lettuce leaf, fill it with steak and pickled vegetables, and wrap it up like a taco. Enjoy!
