Preparing the King Salmon

Marinate the Salmon
In a bowl, whisk together olive oil, lemon juice, garlic powder, salt, black pepper, and fresh dill. Add the salmon fillets and coat them evenly. Let them marinate for at least 30 minutes in the refrigerator.

Making the Vegetable Risotto

Cook the Risotto
Stir in the Arborio rice, allowing it to toast for about 2 minutes. Gradually add vegetable broth, one cup at a time, stirring frequently. Wait until each cup is absorbed before adding the next. This should take about 18-20 minutes. When rice is al dente, stir in peas, Parmesan cheese, salt, and black pepper.
Preparing the Crispy Brussels Sprouts

Roast the Brussels Sprouts
Preheat the oven to 400°F (200°C). In a bowl, toss halved Brussels sprouts with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20-25 minutes, flipping halfway through, until they are crispy and golden brown.
