Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Prepare the Corn

If using fresh corn, shuck the corn and remove the kernels from the cob using a sharp knife. You should have about 4 cups of corn kernels.

Making the Creamed Corn

  1. 3

    Blend Ingredients

In a large mixing bowl, combine the fresh corn kernels, heavy cream, milk, sugar, and salt. Use an immersion blender or a regular blender to puree the mixture until it is mostly smooth but still has some texture.

  2. 4

    Add Eggs

Crack the eggs into the corn mixture and blend again until fully incorporated.

Baking

  1. 5

    Pour into Baking Dish

Pour the creamed corn mixture into a greased baking dish, spreading it evenly.

  2. 6

    Bake

Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.

Brûlée Topping

  1. 7

    Add Brown Sugar

Once the creamed corn is done baking, remove it from the oven and sprinkle the brown sugar evenly over the top.

  2. 8

    Caramelize the Sugar

Using a kitchen torch, carefully caramelize the brown sugar until it forms a crispy top. If you don’t have a torch, you can place it under the broiler for a few minutes, watching closely to avoid burning.

Serving

  1. 9

    Cool and Serve

Allow the creamed corn brûlée to cool for a few minutes before serving. Cut into portions and enjoy warm.
