Preparing the Chicken

Marinate the Chicken
In a bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Remove the chicken from the marinade and dredge each piece in all-purpose flour. Shake off excess flour and carefully place in the hot oil. Fry for about 6-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

In a large bowl, whisk together all-purpose flour, baking powder, sugar, and salt until well combined.

Make the Waffle Batter
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.

Cook the Waffles
Preheat your waffle iron and lightly grease it. Pour the appropriate amount of batter onto the hot waffle iron and cook according to the manufacturer's instructions until golden brown and crisp. Repeat with remaining batter.

While the waffles are cooking, cook the eggs sunny side up in a non-stick skillet. Cook bacon until crispy and crumble it.

Place a waffle on a plate, top with a fried chicken breast, sprinkle crumbled bacon on top, and place a sunny side up egg. Serve with warm maple syrup on the side.
