Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Fillings

    Slice the Vegetables

    Using a sharp knife, slice the cucumber into thin strips and the avocado into thin slices. Set aside.

    Prepare the Crab Stick

    If the crab stick is not pre-sliced, cut it into thin strips.

Assemble the Rolls

    Prepare the Rolling Area

    Place a bamboo sushi mat on a clean surface and lay a nori sheet shiny side down on the mat.

    Add Rice

    Wet your hands with water to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    Lay a few strips of crab stick, cucumber, and avocado along the bottom edge of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently to keep the roll tight. Continue rolling until you reach the exposed edge of the nori. Use a little water to seal the edge.

    Slice the Rolls

    Using a sharp, wet knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between slices for clean cuts.

Serve

    Plate and Enjoy

    Arrange the sushi rolls on a plate, serve with soy sauce, wasabi, and pickled ginger on the side.
