    Malt the Barley

    Soak the barley in water for 24 hours, then drain and allow it to germinate in a cool, dark place for about 5 days, turning it occasionally until it sprouts.

    Dry the Malt

    Once the barley has germinated, dry it in an oven at a low temperature (around 150°F or 65°C) for about 8 hours to stop the germination process.

    Mashing

    In a large pot, combine the dried malted barley with 12 cups of hot water. Heat the mixture to about 150°F (65°C) and hold it for 60 minutes, allowing the starches to convert to sugars.

    Boil

    After mashing, bring the mixture to a boil for 10-15 minutes, then cool it down to about 70°F (21°C).

    Fermentation

    Transfer the cooled mixture to a fermentation vessel and add the yeast. Seal the vessel and let it ferment for about 1-2 weeks at room temperature until fermentation is complete.

    Distillation

    Once fermentation is complete, transfer the liquid to a distillation pot and heat it. Collect the distillate, which will be your spirit.

    Aging

    Pour the distilled spirit into oak barrels for aging. Allow it to age for at least 2 years to develop its flavor profile. The longer it ages, the richer the flavor will become.

    Bottling

    After aging, filter the spirit and bottle it. Store in a cool, dark place until ready to enjoy.
