Steak Preparation

    Marinate the Skirt Steak

    In a mixing bowl, combine the teriyaki sauce, garlic powder, black pepper, and salt. Place the skirt steak in a resealable plastic bag and pour the marinade over it. Seal the bag and ensure the steak is well coated. Refrigerate for at least 1 hour, preferably overnight for maximum flavor.

    Cook the Skirt Steak

    Preheat a grill or a skillet over medium-high heat. Remove the steak from the marinade and discard the remaining marinade. Grill the skirt steak for about 4-5 minutes per side for medium-rare, or until desired doneness. Let the steak rest for 5 minutes before slicing against the grain.

    Prepare the Potatoes

    Wash and peel the Kennebec potatoes. Cut them into even-sized fries, about 1/4 inch thick. Rinse the cut potatoes in cold water to remove excess starch and pat them dry with paper towels.

    Fry the Potatoes

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the dried potato fries in batches, frying for about 5-6 minutes until they are golden brown and crispy. Remove the fries with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.

    Grill the Onions

    Slice the large onion into thick rings. In a skillet, heat the olive oil over medium heat. Add the onion rings and sprinkle with salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 10-15 minutes.
