Pork Chop

Whipped Potatoes

Method

Pork Chop

  1. 1

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Prepare Pork Chop

Pat the Duroc pork chop dry with paper towels. This helps in getting a good sear.

  3. 3

    Season Pork Chop

Rub the pork chop with olive oil, then season generously with salt, black pepper, and fresh rosemary.

  4. 4

    Sear Pork Chop

In a skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, add the pork chop and sear for about 4-5 minutes on each side until golden brown.

  5. 5

    Roast Pork Chop

Transfer the skillet to the preheated oven and roast for 10-15 minutes or until the internal temperature reaches 145°F (63°C).

  6. 6

    Rest Pork Chop

Remove from the oven and let the pork chop rest for 5 minutes before slicing.

Apple Sauce

  1. 7

    Combine Ingredients

In a large pot, combine the chopped apples, sugar, cinnamon, and lemon juice. Stir well to coat the apples.

  2. 8

    Cook Apple Mixture

Cook over medium heat, stirring occasionally, until the apples are soft and begin to break down, about 15-20 minutes.

  3. 9

    Mash or Blend

Once cooked, mash the mixture with a potato masher or blend with an immersion blender until desired smoothness is achieved.

  4. 10

    Cool Apple Sauce

Remove from heat and set aside to cool slightly before serving.

Whipped Potatoes

  1. 11

    Boil Potatoes

Place the chopped potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil.

  2. 12

    Drain Potatoes

Cook the potatoes until tender, about 15-20 minutes. Drain and return to the pot.

  3. 13

    Add Ingredients

Add the butter, milk, salt, and black pepper to the potatoes.

  4. 14

    Mash Potatoes

Mash the potatoes with a potato masher or use a hand mixer for a smoother texture.

  5. 15

    Serve

Serve the whipped potatoes warm alongside the pork chop and apple sauce.
