Prepare the Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and sauté until translucent, about 3 minutes. Add the mushrooms and cook for another 2-3 minutes until softened. Stir in the roasted red peppers and spinach, cooking until the spinach is wilted. Season with salt and black pepper. Remove from heat and set aside.

Cook the Omelet
In the same skillet, add another tablespoon of olive oil and heat over medium-high heat. Pour in the beaten eggs, swirling the pan to evenly distribute them. Cook for about 2-3 minutes until the edges start to set.

Add the Filling
Once the eggs are mostly set, spoon the sautéed vegetable mixture onto one half of the omelet. Sprinkle the mixed cheese on top of the vegetables.

Fold and Serve
Carefully fold the omelet in half over the filling. Cook for another minute to allow the cheese to melt. Slide the omelet onto a plate and serve hot.
