1. Prepare the Chimichurri Sauce

In a bowl, combine the chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well and set aside.

2. Cook the Potatoes

Boil the peeled and cubed potatoes in salted water until tender (about 15-20 minutes). Drain and return to the pot.

3. Mash the Potatoes

Add butter, milk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy. Adjust seasoning to taste.

4. Cook the Flat Iron Steak

Season the flat iron steak with salt and black pepper. Heat a skillet over medium-high heat and sear the steak for about 4-5 minutes on each side for medium-rare. Adjust cooking time for desired doneness.

5. Sauté the Asparagus

In the same skillet, add asparagus and sauté for 3-4 minutes until tender but still crisp. Season with salt and pepper.

6. Serve

Plate the mashed potatoes, top with chimichurri sauce, and serve with the seared flat iron steak and sautéed asparagus.
