Prepare the Ingredients
Chop the roasted red peppers, onions, and jalapeños. Set aside.

Heat the Skillet
In a non-stick skillet, heat the olive oil or butter over medium heat until hot.

Add Ham and Peppers
Stir in the diced ham and roasted red peppers, cooking for another 2 minutes.

Add the Eggs
Pour the whisked eggs over the cooked vegetables and ham mixture. Allow to cook for about 2-3 minutes without stirring.

Add Cheese and Fold
Once the edges start to set, sprinkle the mixed cheese over one half of the omelet. Carefully fold the other half over the cheese.

Cook Until Set
Cook for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked.

Serve
Slide the omelet onto a plate, cut in half if desired, and serve hot.
