Shrimp Scampi Ingredients

Method

Cooking Directions

  1. 1

    Cook the Linguine

Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

  2. 2

    Sauté the Shrimp

In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp to the skillet and cook for about 2-3 minutes on each side, until they turn pink and opaque. Remove shrimp from skillet and set aside.

  3. 3

    Make the Sauce

In the same skillet, add white wine and bring to a simmer, scraping up any brown bits from the bottom of the pan. Let it reduce for about 2-3 minutes. Add the butter, lemon juice, and red pepper flakes. Stir until butter is melted and the sauce is well combined.

  4. 4

    Combine Everything

Return the cooked shrimp to the skillet and add the cooked linguine. Toss to coat everything in the sauce, adding reserved pasta water a little at a time until desired consistency is reached. Season with salt and black pepper to taste.

  5. 5

    Serve

Plate the shrimp scampi over a bed of linguine, sprinkle with shaved Parmesan cheese and chopped parsley before serving.
