Prepare the Dough
In a large mixing bowl, dissolve the yeast and brown sugar in warm water. Let it sit for about 5 minutes until frothy. Then, add the salt and flour gradually until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover it, and let it rise in a warm place until doubled, about 1 hour.

Preheat the Oven
Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

Shape the Pretzel Bites
Once the dough has risen, punch it down and divide it into small pieces (about 1-inch each). Roll each piece into a ball.

Boil and Bake
In a large pot, bring water to a boil and add the baking soda. Boil the pretzel bites in batches for about 30 seconds, then remove with a slotted spoon and place them on the prepared baking sheet.

Bake
Bake in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.
