Prepare the Ingredients
Slice the onion and bell pepper. Roast the green chiles if not already roasted and chop them.

Cook the Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced onion and bell pepper, and sauté until they are soft, about 5-7 minutes.

Cook the Beef
Add the thinly sliced beef to the skillet with the softened vegetables. Season with salt and black pepper. Cook until the beef is browned and cooked to desired doneness, about 5-8 minutes.

Prepare the Queso
In a small saucepan, heat the queso blanco over low heat until melted. Stir in the chopped green chiles and mix well.

Assemble the Hoagies
Toast the hoagie buns lightly. Fill each bun with the cooked beef and vegetable mixture, then pour the green chile queso over the top.
