Enchiladas

Method

Preparation

  1. 1

    Prepare the Filling

In a skillet, heat olive oil over medium heat. Add diced onions and cook until translucent. Stir in minced garlic and cook for an additional minute. If using, add cooked chicken or beef, salt, and black pepper. Mix well and remove from heat.

  2. 2

    Assemble the Enchiladas

Preheat your oven to 350°F (175°C). In a baking dish, spread a thin layer of chile sauce at the bottom. Take a corn tortilla, fill it with the filling mixture, and roll it up. Place each rolled tortilla seam-side down in the baking dish. Repeat until all tortillas are filled and placed in the dish.

  3. 3

    Add Sauce and Cheese

Pour the remaining chile sauce over the top of the enchiladas, ensuring they are well covered. Sprinkle the shredded Cheddar Jack cheese evenly over the top.

  4. 4

    Bake

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly browned.

  5. 5

    Serve

If desired, fry an egg to add on top of each serving. Serve the enchiladas with a side of refried beans.
