Prepare the Shrimp
In a medium bowl, combine the shrimp, minced garlic, salt, and black pepper. Toss to coat the shrimp evenly. Let marinate for 15 minutes.

Make the Honey Sriracha Sauce
In a small bowl, whisk together honey and sriracha sauce until well combined. Adjust the spiciness to your liking.

Wrap the Shrimp
Soak the rice paper wrappers in warm water for about 10 seconds until soft. Place a shrimp in the center of each wrapper, add a sprinkle of cilantro, and fold the sides over the shrimp. Roll tightly to secure.

Fry the Wrapped Shrimp
Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the rice paper wrapped shrimp in batches, frying until golden and crispy (about 3-4 minutes per side). Drain on paper towels.

Serve the crunchy shrimp hot with honey sriracha sauce drizzled on top and lime wedges on the side.
