Prepare the Ingredients
Chop the corned beef, green chile, and onion into small pieces.

Cook the Hash Browns
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the hash browns and cook until golden brown and crispy, about 5-7 minutes. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then add the green chile and cook for an additional 2 minutes.

Mix in Hash Browns
Fold in the cooked hash browns and season with salt and pepper. Cook for another 2-3 minutes until everything is heated through and well combined.

Cook the Eggs
In a separate non-stick skillet, cook the eggs to your liking (fried, scrambled, etc.).

Serve
Serve the corned beef hash hot, topped with the cooked eggs.
