1. Prepare the Chicken Salad
In a large bowl, combine the shredded chicken, mayonnaise, dried cranberries, chopped pecans, salt, and black pepper. Mix well until all ingredients are evenly distributed.
2. Toast the Croissants
Preheat the oven to 375°F (190°C). Slice the croissants in half and place them on a baking sheet. Toast in the oven for about 5-7 minutes or until golden brown.
3. Assemble the Sandwich
Once the croissants are toasted, remove them from the oven. Place lettuce leaves on the bottom half of each croissant. Spoon the chicken salad mixture generously over the lettuce, then top with slices of tomato. Place the top half of the croissant on the sandwich.
4. Serve
Cut the sandwiches in half if desired and serve immediately.
