    Make the Biscuits

    Preheat the oven to 450°F (230°C). In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Turn the dough out onto a floured surface and knead gently. Pat into a 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden brown.

    Prepare the Sausage Gravy

    In a skillet over medium heat, cook the sausage until browned. Sprinkle the flour over the sausage and stir to combine. Gradually add the milk, stirring constantly until the gravy thickens. Season with black pepper to taste.

    Cook the Eggs

    In a separate pan, cook the eggs to your desired style (fried, scrambled, poached, etc.).

    Assemble the Dish

    Split the biscuits in half and place them on plates. Spoon the sausage gravy over the biscuits and serve with the cooked eggs on the side.
