Calamari
Method
Preparation
- 1
Prepare the Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer and mix until the batter is smooth and free of lumps.
- 2
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 3
Fry the Calamari
Dip the calamari rings into the batter, allowing the excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
- 4
Fry the Cherry Peppers
In the same oil, fry the sliced cherry peppers for about 1-2 minutes or until they are slightly crispy. Remove and drain on paper towels.
- 5
Serve
Serve the beer-battered calamari hot with the fried cherry peppers on the side. Enjoy with almond romesco sauce for dipping.
