    Prepare the Beef

    Season the beef tenderloin with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the beef on all sides until it reaches your desired doneness. Remove from the skillet and let rest.

    Cook the Vegetables

    In the same skillet, add butter and sauté chopped onions and sliced mushrooms until they are softened and browned. Add minced garlic and cook for another minute.

    Make the Demi Glace

    Pour in the Cabernet Sauvignon and let it simmer until reduced by half, scraping any browned bits from the bottom of the skillet.

    Prepare the Mashed Potatoes

    Peel and chop the potatoes, then boil them in salted water until tender. Drain and mash with milk, salt, and pepper.

    Cook the Asparagus

    Blanch the asparagus in boiling water for 2-3 minutes until bright green and tender-crisp. Drain and season with salt.

    Slice the beef and serve it over the mashed potatoes, topped with the mushroom and onion mixture, with asparagus on the side.
