Preheat the oven to 350°F (175°C). Spread the sliced almonds on a baking sheet and toast them in the oven for about 8-10 minutes, or until they are golden brown. Keep an eye on them to prevent burning.

Prepare the Pomegranate Gastrique
In a small saucepan, combine the pomegranate juice, sugar, balsamic vinegar, salt, and black pepper. Bring to a boil over medium heat, then reduce the heat and let it simmer until it reduces by half and thickens, about 15-20 minutes. Remove from heat and let cool.

Take the wheel of Brie cheese and press it gently into the toasted almonds, ensuring that the cheese is evenly coated on all sides.
