Method

Preparing the Pasta

  1. 1

    Cook the Pasta

In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

Preparing the Vegetables

  1. 2

    Chop the Vegetables

While the pasta is cooking, chop the bell peppers, zucchini, and carrot into bite-sized pieces. Halve the cherry tomatoes and prepare the broccoli florets.

Making the Sauce

  1. 3

    Sauté Garlic

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

  2. 4

    Add Vegetables

Add the chopped bell peppers, zucchini, carrot, cherry tomatoes, and broccoli to the skillet. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp.

  3. 5

    Add Broth and Season

Pour in the vegetable broth and bring to a simmer. Season with salt and black pepper to taste. Allow to cook for an additional 2-3 minutes.

Combining Everything

  1. 6

    Combine Pasta and Sauce

Add the drained pasta to the skillet with the vegetables and sauce. Toss everything together to coat the pasta well.

  2. 7

    Add Cheese and Basil

Remove from heat and stir in the grated Parmesan cheese and chopped fresh basil. Mix until the cheese is melted and everything is well combined.
