Dough Preparation

Activate the Yeast
In a small bowl, combine warm water (1.5 cups) and sugar (1 tbs). Sprinkle active dry yeast (2 tsp) over the mixture and let it sit for 5-10 minutes until it becomes frothy.

Make the Dough
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Add the activated yeast mixture and olive oil (2 tbs). Mix until the dough starts to come together.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Shape the Knots
Preheat your oven to 400°F (200°C). Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into 12 equal pieces. Roll each piece into a long rope (about 8 inches long) and tie it into a knot.

Place the knots on a greased baking sheet, cover them with a cloth, and let them rise for another 30 minutes.

Bake the knots in the preheated oven for 15-20 minutes or until they are golden brown.

In a small saucepan, melt unsalted butter (1 cup) over medium heat. Add minced garlic (4 cloves) and sauté for 1-2 minutes until fragrant. Remove from heat and stir in chopped parsley (2 tbs) and salt (1 tsp).
