Prepare the Zucchini
Wash the zucchini thoroughly. Cut off the ends and slice them into thin strips, about 1/4 inch thick. Place the zucchini strips on a paper towel and sprinkle with salt. Let them sit for about 15 minutes to draw out excess moisture.

Make the Batter
In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. In a separate bowl, whisk the egg and then add the sparkling water. Gradually mix the wet ingredients into the dry ingredients until just combined. The batter should be slightly lumpy.

Prepare the Aioli Sauce
Mince the garlic cloves and add them to a bowl with the mayonnaise, lemon juice, and finely chopped fresh parsley. Mix well until combined. Adjust seasoning with salt and pepper to taste.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.

Fry the Zucchini
Once the oil is hot, dip the zucchini strips into the batter, allowing any excess to drip off. Carefully place the battered zucchini into the hot oil in batches, making sure not to overcrowd the pan. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve the crispy zucchini frites hot with the aioli dipping sauce on the side.
